Agricultural practices: Biodynamic. Type of yeast: Native. Vinification: After gentle pressing, the grapes undergo a long maceration. Alcoholic fermentation begins spontaneously with native yeasts, without the use of sulfites. Aging: Aged in small oak barrels for a minimum of 18 months in contact with its native yeasts, then bottled for almost 6 months at a controlled temperature of 15°C.
