Vinification: The Nero d'Avola grapes, harvested in the first half of September from medium-textured clay-limestone soils at about 450/550 meters above sea level, are vinified in stainless steel tanks with maceration on the skins for about 15 days at a controlled temperature of 25∘C – 28∘C. Malolactic fermentation is carried out entirely in stainless steel tanks.
Breeding: Brief aging in second-use French oak barrels from Allier and Troncaise, followed by bottle aging for a few months.
