- Breeding: Assyrtiko: fermentación espontánea en barricas de 225 – 2000 L. Fermentación controlada por temperatura a 18-22 °C. Muy bajo contenido de SO2, sin aditivos químicos. Segunda fermentación en botella. Método tradicional. Sur lie durante 48 – 90 meses. Liberado 12 meses después del dégorgement.

Domaine Karanika, ubicado en Naoussa, Grecia, es reconocido por sus vinos espumosos orgánicos elaborados a partir de variedades de uva autóctonas, a la vez que adopta la rica tradición de la cultura ecuestre en la región.
El suelo en Domaine Karanika se caracteriza por su composición rocosa, arcillo-calcárea, que proporciona un excelente drenaje y contribuye a la complejidad mineral de los vinos. Este terruño único, combinado con una gran altitud y un microclima, potencia la expresión de variedades de uva autóctonas como la Xinomavro, dando como resultado vinos con profundidad y carácter.

Organic fertilizers are used
as compost, manure and
other natural materials to enrich the soil and provide the nutrients necessary for the growth of vines.
Techniques are implemented to prevent soil erosion, such as planting vegetative covers between the rows of vines and applying minimal or no tillage practices.
During the winemaking process, chemical additives are avoided and the handling of the wine is minimized. The use of natural yeasts and the reduction of sulfites are encouraged.
What We Mean By Biodynamic Viticulture
The moon in relation to the earth and its sidereal cycles, the biodynamic agricultural calendar helps the farmer know the right time to prune, fertilize and harvest.
No herbicides are used and the vegetation is allowed to grow freely between the rows of the vines.
Natural fertilizers are made with animal excrement that is introduced into cow horns and buried to later dynamize them in water and apply it to the vineyard.
