- Vinification: Grapes at different stages of ripeness. Destemmed, crushed and gently pressed in a pneumatic press to obtain the free must.
- Breeding: Assyrtiko: Spontaneous fermentation in 225–2000 L barrels. Temperature-controlled fermentation at 18–22 °C. Very low SO2 content, no chemical additives. Secondary fermentation in the bottle. Traditional method. Aged on the lees for 48–90 months. Released 12 months after disgorgement.

Domaine Karanika, located in Naoussa, Greece, is recognized for its organic sparkling wines made from indigenous grape varieties, while embracing the rich tradition of equestrian culture in the region.
The soil at Domaine Karanika is characterized by its rocky, clay-limestone composition, which provides excellent drainage and contributes to the mineral complexity of the wines. This unique terroir, combined with high altitude and a microclimate, enhances the expression of indigenous grape varieties such as Xinomavro, resulting in wines with depth and character.

What We Mean by Organic Viticulture
Organic fertilizers are used
as compost, manure and
other natural materials to enrich the soil and provide the nutrients necessary for the growth of vines.
Techniques are implemented to prevent soil erosion, such as planting vegetative covers between the rows of vines and applying minimal or no tillage practices.
During the winemaking process, chemical additives are avoided and the handling of the wine is minimized. The use of natural yeasts and the reduction of sulfites are encouraged.
What We Mean By Biodynamic Viticulture
The moon in relation to the earth and its sidereal cycles, the biodynamic agricultural calendar helps the farmer know the right time to prune, fertilize and harvest.
No herbicides are used and the vegetation is allowed to grow freely between the rows of the vines.
Natural fertilizers are made with animal excrement that is introduced into cow horns and buried to later dynamize them in water and apply it to the vineyard.
