For SARAJA, it means caring for the vineyards and the wine, starting in the winery and continuing throughout our lives, all guided by an ethic of respect. Every gesture, decision, or action stems from this source. The Earth is not our parents' inheritance, but a loan from our children. When we observe the producer, we recognize their ethical responsibility to avoid ruining the good grapes produced in the vineyard. This is why we have reduced filtration, clarification, and the use of sulfur, acting only when necessary and as little as possible. In the winery, the wine is protected from light and climatic changes, surrounded by silence, evolving and maturing its own personality and strengthening its character. We fully respect every part of its creation.
