Vinification: Fermentation and maceration for at least 20 days, depending on the batch, at a controlled temperature below 30°C. Maturation for 12 months in new and used French oak barrels (Allier), followed by 12 months in large Slavonian oak barrels.
Aging: bottle aging for at least six months.
