- Vinification: Traditional fermentation methods are used, with the fermentation cap kept at a controlled temperature (27-28 °C). Fermentation takes place in large Slavonian oak vats, with frequent pump-overs. This is followed by a long period of skin contact with the must, approximately thirty days, to extract as many polyphenolic compounds as possible and facilitate the subsequent malolactic fermentation in barrels.

The Apollonio winery has deep historical and family roots in the Puglia region. Founded in the 1870s, the winery has been run by several generations of the Apollonio family. Its focus is on the production of wines that reflect the region's winemaking tradition and, at the same time, integrate modern techniques to improve the quality and expression of its wines.
The Puglia region is known for its warm Mediterranean climate and rich winemaking tradition. Notable appellations of origin in Puglia include Salice Salentino DOC and Copertino DOC for red wines, and Primitivo di Manduria DOC for wines made primarily from the Primitivo grape.
