  • Vinification: PThe grapes are gently pressed after destemming. The must and skins are then transferred together to the tank for maceration. During this time, the skins are manually pressed against the surface of the tank to maintain contact with the must, resulting in better maceration and, consequently, better extraction. This is done twice a day, both morning and afternoon. Separation occurs after 5 days of maceration.
  • Fermentation: Spontaneous fermentation with native yeasts. No temperature control.
  • Breeding: Sur lie s for 6/7 months with weekly batonage.
  • Filtration: Unfiltered
