- Vinification: Prensado suave de las uvas, despalilladas. El mosto y las pieles van juntos al tanque para la maceración. Durante este tiempo, se presionan manualmente las pieles en la superficie del tanque para que permanezcan en contacto con el mosto, logrando una mejor maceración y, por lo tanto, una mejor extracción. Esto se realiza dos veces al día, tanto por la mañana como por la tarde. La separación ocurre después de 5 días de maceración.
