Schinopefko “Retsina”

  • Vinification:Uvas despalilladas y estrujadas suavemente inmediatamente después de la cosecha. Se utiliza únicamente el primer mosto, que fermenta en tanque de acero inoxidable durante cuatro semanas a temperatura controlada de 16 °C, con diferentes levaduras para aportar complejidad. Durante la fermentación se incorpora una pequeña cantidad de resina fresca de pino de Alepo, envuelta en una gasa de algodón, que se retira al finalizar la fermentación. Posteriormente, el vino se estabiliza en frío y se filtra una sola vez antes del embotellado.

In 1990, Angelos Rouvalis, taking advantage of the slopes of the mountainous Aigialeia, formed a model gravity winery specially designed for the production of quality terroir wines. Here, the slope of the land gives the winemaking route a natural, effortless and calm flow.

What we mean by heroic and organic viticulture

The vineyards are located on extremely steep slopes. This requires greater effort and manual work due to the limited reach with machinery.

Getting to the vineyards can be complicated, requiring special roads and hand picking.

Lower yield of grapes per hectare. Although the grapes are of high quality due to sun exposure and the characteristics of the unique terroir.

Organic fertilizers are used
as compost, manure and
other natural materials to enrich the soil and provide the nutrients necessary for the growth of vines.

Techniques are implemented to prevent soil erosion, such as planting vegetative covers between the rows of vines and applying minimal or no tillage practices.

During the winemaking process, chemical additives are avoided and the handling of the wine is minimized. The use of natural yeasts and the reduction of sulfites are encouraged.
