- Vinification: Tras una rigurosa selección, los racimos se someten a un proceso de secado natural sobre esteras, hasta enero-febrero del año siguiente. Luego se despalillan y prensan, y el mosto se traslada a barricas de roble selladas de 100 litros que contienen la “madre” (una sustancia espesa restante de cosechas anteriores). Tras 7 años en la zona del desván de la “vinsantaia”, el vino se somete a una crianza en botella de un mínimo de 6 meses.

What we mean by biodynamic viticulture
The moon in relation to the earth and its sidereal cycles, the biodynamic agricultural calendar helps the farmer know the right time to prune, fertilize and harvest.
No herbicides are used and the vegetation is allowed to grow freely between the rows of the vines.
Natural fertilizers are made with animal excrement that is introduced into cow horns and buried to later dynamize them in water and apply it to the vineyard.
