Vinification and aging: Según la tradición: fermentaciones bastante largas con los hollejos (sombrero sumergido durante 15-20 días), con frecuentes roturas del sombrero y remontados del mosto. A esto le sigue la Maduración en toneles de roble de entre 2.500 y 3.500 litros.
