- Vinification and aging: Grapes, harvested in boxes, remains in the “fruttaio” until December / January. Water loss, due to the period of drying, promotes concentration of all substances of the grape. Fermentation and maceration take place in small steel vats; after fermentation and aging in oak in 500/1000 liters where the new wine will remain for 18-24 months.

Grape: 40% Corvina, 50% Corvina Grossa, 10% Rondinella
Vineyard: Grapes from a single “Macie” vineyard, located at 350 meters above sea level, exposed to the south east formed by limestone rocks.
Vinification: The grapes are harvested by hand with a slight excess of ripening, this wine is produced only with the best harvest, it is fermented with native yeasts in 40 hl conical vats
Whom Sant'Alda Court The reconversion of the vineyards began a bit blindly in 1985. I felt the need, after a bad harvest, to do something to get my grapes to the winery healthy and ripe.
In 1986 Guyot's first vineyard, Macie, with perhaps a bit extravagant measurements of 90 × 2.60 was a good compromise with the pergola. Reaching 4500 stumps per hectare without having to change all the equipment.
In 2003 we have 6,200 vines per hectare and with the start of the last pergola (Cavallero) somewhat reluctantly, it is time to seek new frontiers, treasuring what we have learned in recent years.
Alcohol: 14%
Tuning: The wine is refined in 255 hl French oak barrels for 48 months.
Color: Intense red that tends to garnet
Bouquet: Fruity, with notes of minerals, licorice and tobacco.
Palate: Well balanced flavor and body.
Operating temperature: 18 – 20 oC
