    • Vinification: Se emplean métodos de fermentación tradicionales con el sombrero flotante a temperatura controlada (27-28 °C). La fermentación se lleva a cabo en grandes tinas de roble de Eslavonia, con remontados frecuentes. A esto le sigue una larga permanencia del mosto sobre los hollejos, aproximadamente treinta días, con el fin de extraer la mayor cantidad posible de sustancias polifenólicas para facilitar el inicio de la posterior fermentación maloláctica en barricas.

The Apollonio winery has deep historical and family roots in the Puglia region. Founded in the 1870s, the winery has been run by several generations of the Apollonio family. Its focus is on the production of wines that reflect the region's winemaking tradition and, at the same time, integrate modern techniques to improve the quality and expression of its wines.
The Puglia region is known for its warm Mediterranean climate and rich winemaking tradition. Notable appellations of origin in Puglia include Salice Salentino DOC and Copertino DOC for red wines, and Primitivo di Manduria DOC for wines made primarily from the Primitivo grape.
