Ubicación y altitud del viñedo: Combinación de los viñedos de las fincas Pozzo y Anfiteatro en el pueblo de Calino, en Cazzago San Martino, situados en una ladera orientada al noroeste con una inclinación media.
Superficie del viñedo: 20 hectáreas.
Edad de las vides: 28 años.
Prácticas agrícolas: Orgánicas.
Vinification: Los racimos enteros se enfrían y luego se prensan suavemente para extraer el mosto flor, que luego fermenta en depósitos de acero a 13-14 °C. El 50 % del Chardonnay fermenta en barricas de roble francés. Cada parcela de viñedo se vinifica por separado para preservar sus cualidades individuales.
Envejecimiento: MADURACIÓN SOBRE LÍES: 120 meses. ENVEJECIMIENTO POSTERIOR AL DESGORGE: al menos 6 meses.

What we mean by organic viticulture
Organic fertilizers are used
as compost, manure and
other natural materials to enrich the soil and provide the nutrients necessary for the growth of vines.
Techniques are implemented to prevent soil erosion, such as planting vegetative covers between the rows of vines and applying minimal or no tillage practices.
During the winemaking process, chemical additives are avoided and the handling of the wine is minimized. The use of natural yeasts and the reduction of sulfites are encouraged.
