- Vinification: La vendimia se realiza a mano utilizando pequeñas cajas. En 2022, tuvo lugar durante la primera quincena de octubre en condiciones climáticas excepcionales. Las uvas alcanzaron una madurez excelente, con buenos niveles de acidez. Tras la selección de la materia prima y un ligero prensado de las uvas, el mosto flor se sometió a un desfangado estático y a una lenta fermentación alcohólica a bajas temperaturas (13-16 °C) hasta aproximadamente mediados de noviembre.

In 1990, Angelos Rouvalis, taking advantage of the slopes of the mountainous Aigialeia, formed a model gravity winery specially designed for the production of quality terroir wines. Here, the slope of the land gives the winemaking route a natural, effortless and calm flow.
The gravity winery, the first Greek winery of its category and one of the few worldwide, is built on a rock in 6 consecutive levels.
