The LEVII estate is today a modern and rational vineyard, along the slopes overlooking the Sarca stream; Its grapes are kissed by the sun, caressed during the day by the Ora del Garda and at night by the breezes that come from the rocks of the Brenta Dolomites. The ideal climate for high-level production of which Trentodoc LEVII sparkling wine is an expression of excellence.

viticulture
What we mean by ecological, sustainable and organic viticulture
It refrains from the use of chemical pesticides, herbicides and synthetic fertilizers. The use of natural methods such as composting, crop rotation and the application of biodynamic preparations is encouraged to improve soil health.
The aim is to preserve and highlight the natural characteristics of the grape and the place where it is grown. In addition, the use of native grape varieties, adapted to the specific environment, is promoted.
The aim is to intervene as little as possible in the winemaking process. It is preferred to allow fermentation to occur naturally, without adding commercial yeasts.
Organic fertilizers are used
as compost, manure and
other natural materials to enrich the soil and provide the nutrients necessary for the growth of vines.
Techniques are implemented to prevent soil erosion, such as planting vegetative covers between the rows of vines and applying minimal or no tillage practices.
During the winemaking process, chemical additives are avoided and the handling of the wine is minimized. The use of natural yeasts and the reduction of sulfites are encouraged.
